Ingredients
Instructions
- Heat the oven to 300°F. Spread the bread on two sheet pans and bake 20 minutes, until dry. Raise the oven to 375°F.
- Brown the sausage in a large skillet, breaking it up, about 8 minutes. Transfer to a large bowl.
- Melt the butter in the same skillet. Cook the onion and celery until soft, 8 minutes. Add the garlic, sage and thyme for 1 minute.
- Add the vegetables, bread and parsley to the sausage and toss.
- Whisk the eggs, broth, salt and pepper. Pour over the bread and toss until evenly moistened.
- Spread in a buttered 9x13-inch dish. Cover with foil and bake 25 minutes, then uncover and bake 20 to 25 minutes more, until golden and crisp on top.
Why this recipe works
Drying the bread first lets it soak up broth without turning mushy. Baking covered keeps the center moist, then uncovering crisps the top for the best of both textures.
Tips, substitutions & storage
- Swap: Use cornbread or sourdough instead of white bread.
- Swap: Skip the sausage and add 8 oz sautéed mushrooms with vegetable broth for a vegetarian stuffing.
- Assemble up to 1 day ahead, cover and refrigerate; add 10 minutes to the covered baking time.
- For vegetarian stuffing, skip the sausage, add 8 oz sautéed mushrooms and use vegetable broth.
- If the bread looks dry after mixing, add broth 1/4 cup at a time.
