Instructions

  1. Heat the oven to 425°F. Pat the chicken very dry and season with 1 tsp salt, the pepper and oregano.
  2. Heat the oil in a large oven-safe skillet over medium-high. Place the chicken skin-side down and cook without moving until the skin is deep golden, 7 to 8 minutes. Transfer to a plate.
  3. Add the potatoes cut-side down with the remaining salt and cook 3 minutes. Add the garlic and lemon slices, then pour in the broth and lemon juice.
  4. Return the chicken skin-side up on top of the potatoes.
  5. Roast 25 to 30 minutes, until the chicken reaches 175°F and the potatoes are tender.
  6. Move the chicken and potatoes to a platter, swirl the butter into the pan juices and spoon over. Sprinkle with parsley.

Why this recipe works

Searing skin-side down without moving it renders the fat and builds crisp, golden skin. The potatoes roast in the chicken drippings and lemony broth, so the whole pan becomes a sauce.

Tips, substitutions & storage

  • Swap: Use boneless thighs and roast 15–18 minutes instead of 25–30.
  • Swap: Swap baby potatoes for chunks of carrot or sweet potato.
  • Thighs stay juicy at higher temperatures than breasts, so 175°F gives tender, not dry, meat.
  • No oven-safe skillet? Brown in a regular pan and roast in a 9x13-inch baking dish.
  • Leftovers keep 4 days; reheat in a 375°F oven to keep the skin crisp.
