Ingredients
Instructions
- Brown the sausage in a large skillet over medium-high heat, breaking it up, about 7 minutes. Add the onion and bell pepper and cook 4 minutes more. Drain off excess fat.
- Grease a 9x13-inch baking dish. Spread the bread cubes in it, top with the sausage mixture and 1 1/2 cups of the cheese.
- Whisk the eggs, milk, dry mustard, salt and pepper. Pour over the casserole.
- Cover and chill at least 1 hour or up to overnight.
- Heat the oven to 350°F. Sprinkle the remaining cheese on top.
- Bake uncovered 45 to 50 minutes, until the center is set and a knife comes out clean. Rest 10 minutes, top with green onions and cut into squares.
Why this recipe works
Day-old bread soaks up the egg custard like a sponge, and an hour in the fridge lets it absorb evenly so the bake is creamy, not dry. Dry mustard sharpens the cheddar flavor without tasting like mustard.
Tips, substitutions & storage
- Swap: Use diced ham, cooked bacon or plant-based sausage instead of pork sausage.
- Swap: Pepper jack or Swiss can replace the cheddar.
- Swap sausage for diced ham or crumbled bacon, or use 3 cups sautéed vegetables for a meatless version.
- Frozen hash browns (4 cups, thawed) can replace the bread for a gluten-free casserole.
- Cooked casserole keeps 4 days in the fridge or 2 months in the freezer, cut into portions.
