Ingredients

Instructions

  1. Heat 1 tbsp oil in a large nonstick skillet over medium-high. Add the potatoes and cook, stirring now and then, until browned and tender, about 8 minutes. Add the pepper and onion and cook 3 minutes. Transfer to a bowl.
  2. Whisk the eggs, milk, salt and pepper.
  3. Lower the heat to medium-low, add the remaining oil and pour in the eggs. Stir slowly with a spatula until softly set, 2 to 3 minutes.
  4. Warm the tortillas in the microwave for 20 seconds so they fold without cracking.
  5. Divide the eggs, potato mixture and cheese among the tortillas. Fold in the sides and roll up tightly.
  6. Toast seam-side down in a dry skillet for 1 minute per side if eating now. Serve with salsa.

Why this recipe works

Cooking the potatoes first gives crisp edges that stay pleasant after freezing, and pulling the eggs while slightly wet keeps them tender when reheated. A quick toast seals the seam so the burrito holds together.

Tips, substitutions & storage

  • Swap: Use 1 cup crumbled cooked sausage or black beans for extra protein.
  • Swap: Whole wheat or low-carb tortillas work the same way.
  • To freeze, cool completely, wrap each burrito in foil, then put in a freezer bag. Keeps 3 months.
  • Reheat from frozen: remove foil, wrap in a damp paper towel and microwave 2 1/2 to 3 minutes, turning halfway.
  • Pull the eggs off the heat while they still look slightly wet — they finish cooking inside the burrito.
