Ingredients
Instructions
- Add the onion, jalapeño, garlic and cilantro to a blender or food processor and pulse until finely chopped.
- Add the canned tomatoes, fresh tomato, lime juice, salt, cumin and sugar.
- Pulse 8 to 10 times, until the salsa is as chunky or smooth as you like.
- Taste and adjust the salt, lime or heat.
- Chill at least 30 minutes so the flavors blend, then serve with tortilla chips.
Why this recipe works
Canned tomatoes give the smooth, consistent texture of restaurant salsa, while a fresh tomato adds brightness. Pulsing instead of blending keeps it from turning watery.
Tips, substitutions & storage
- Swap: Use 2 cups chopped fresh ripe tomatoes instead of canned in summer.
- Swap: Swap the jalapeño for a serrano for more heat.
- Pulse rather than blend continuously to avoid a watery salsa.
- Leave some jalapeño seeds in for more heat.
- Keeps 5 days in a covered jar in the fridge.
