Instructions

  1. Take the cheeses out of the fridge 30 to 45 minutes before serving.
  2. Place the cheeses on a large board first, spaced apart, and set a small bowl of jam near the brie.
  3. Fold the salami into quarters and loosely bunch the prosciutto; add them in rivers between the cheeses.
  4. Fill bigger gaps with clusters of grapes and dried fruit.
  5. Tuck crackers around the edges and scatter nuts into the small spaces.
  6. Garnish with rosemary sprigs and set out cheese knives.

Why this recipe works

Mixing a soft, a firm and an aged cheese gives every guest something they like. Letting the cheese warm up for 30 minutes brings out its full flavor and texture.

Tips, substitutions & storage

  • Swap: Use any mix of one soft, one firm and one aged cheese you like.
  • Swap: Swap the cured meats for marinated vegetables or olives for a vegetarian board.
  • Plan about 3 oz of cheese and meat per guest for an appetizer board.
  • Mix textures: one soft, one firm, one aged cheese.
  • Assemble everything but the crackers up to 2 hours ahead and keep covered in the fridge.
