Ingredients

Instructions

  1. Lay the bacon in a cold skillet and cook over medium heat, turning occasionally, until crisp, 8 to 10 minutes. Drain on paper towels.
  2. Toast the bread until golden.
  3. Season the tomato slices lightly with salt and pepper.
  4. Spread mayonnaise on one side of each toast.
  5. Layer lettuce, tomato and 4 slices of bacon on two of the toasts, then close the sandwiches.
  6. Cut in half diagonally and serve right away.

Why this recipe works

Starting bacon in a cold pan renders the fat slowly for strips that are crisp from end to end. Salting the tomato brings out its juice and flavor, and mayo on the toast acts as a barrier against sogginess.

Tips, substitutions & storage

  • Swap: Use turkey bacon, or bake bacon at 400°F for 15–20 minutes instead of pan-frying.
  • Swap: Swap mayonnaise for mashed avocado.
  • Starting bacon in a cold pan renders the fat slowly for evenly crisp strips.
  • Oven option: bake bacon on a foil-lined sheet at 400°F for 15 to 20 minutes.
  • Add sliced avocado or a fried egg to make it a BLAT or breakfast BLT.
