Ingredients
Instructions
- Whisk the melted butter, brown sugar and granulated sugar until smooth. Whisk in the egg, yolk and vanilla.
- In another bowl, whisk the flour, baking soda, cornstarch and salt.
- Stir the dry ingredients into the butter mixture until just combined, then fold in the chocolate chips.
- Cover and chill the dough at least 30 minutes.
- Heat the oven to 350°F and line baking sheets with parchment. Scoop 2-tablespoon balls about 2 inches apart.
- Bake 10 to 12 minutes, until the edges are golden but the centers look soft. Sprinkle with flaky salt and cool 5 minutes on the pan.
Why this recipe works
Melted butter and extra brown sugar make a chewy cookie, and an extra yolk adds richness. A little cornstarch keeps the centers soft, and chilling the dough stops the cookies from spreading flat.
Tips, substitutions & storage
- Swap: Use milk, dark or white chocolate chips, or chopped chocolate bars.
- Swap: Add 1/2 cup chopped walnuts or pecans in place of half the chips.
- Swap: Use salted butter and cut the added salt to 1/4 tsp.
- Swap: Swap 1/4 cup of the brown sugar for granulated sugar if you like a crisper, slightly flatter cookie.
- Chilling the dough keeps the cookies thick and deepens the flavor.
- Pull them from the oven while the centers still look slightly underdone.
- Freeze scooped dough balls and bake from frozen, adding 1 to 2 minutes.
